Ingredients

  • 1 pound Italian sausage (mild or spicy)
  • 2 tablespoons Olive oil
  • 2 medium Zucchini
  • 1.5 cups Cherry tomatoes
  • 3 large Garlic cloves
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Red pepper flakes (optional)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 1 cup Mozzarella cheese, shredded
  • 0.25 cup Fresh basil leaves

Directions

Step 1

Heat a large skillet over medium heat. Add 1 tablespoon of olive oil to the skillet, then add the Italian sausage. Cook for 6-8 minutes, breaking it up into smaller pieces as it browns. Once fully cooked, remove the sausage from the skillet and set aside.

Step 2

While the sausage cooks, slice the zucchini into half-moons and halve the cherry tomatoes. Mince the garlic cloves.

Step 3

In the same skillet, add the remaining tablespoon of olive oil. Add the zucchini and cook for 3-4 minutes, stirring occasionally, until it begins to soften.

Step 4

Add the cherry tomatoes, minced garlic, dried oregano, and red pepper flakes (if using) to the skillet. Season with salt and ground black pepper. Cook for an additional 4-5 minutes, allowing the tomatoes to release their juices.

Step 5

Return the cooked Italian sausage to the skillet and stir everything together. Reduce the heat to low and let the flavors meld for 3-4 minutes.

Sprinkle the shredded mozzarella cheese evenly over the top of the skillet. Cover with a lid and cook for 2-3 minutes, or until the cheese is melted and bubbly.
