  • 4 medium zucchini
  • 1 medium onion
  • 1 teaspoon salt
  • 3 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1.5 cups milk
  • 1 cup shredded cheddar cheese
  • 1 cup breadcrumbs
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash the zucchini and slice them into thin rounds, about 1/4 inch thick. Dice the onion.

Step 3

Bring a large pot of water to boil. Add the zucchini slices and 1/2 teaspoon of salt, then blanch for 2 minutes. Drain and set aside.

In a large skillet over medium heat, melt 2 tablespoons of butter. Add the diced onion and sauté until softened, about 5 minutes.
