Ingredients

  • 3 medium zucchini
  • 2 tablespoons olive oil
  • 1 small, diced onion
  • 3 cloves, minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 3 large eggs
  • 0.5 cup, grated parmesan cheese
  • 1 cup, shredded mozzarella cheese
  • 0.5 cup panko breadcrumbs (optional for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease an 8x8-inch baking dish or similar-sized casserole dish.

Step 2

Wash and dry the zucchini. Slice them into 1/4-inch rounds and set aside.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for 3-4 minutes until soft and translucent.

Step 4

Stir in the minced garlic and cook for another minute until fragrant.

Step 5

Add the sliced zucchini to the skillet and sauté for 5 minutes, stirring occasionally. Sprinkle in the oregano, basil, salt, and black pepper, ensuring the zucchini is evenly coated.

Step 6

Remove the skillet from heat and let the zucchini mixture cool slightly.

Step 7

In a large mixing bowl, whisk together the eggs and grated parmesan cheese until well combined.

Step 8

Gently fold the zucchini mixture into the egg and cheese mixture, ensuring everything is evenly incorporated.

Step 9

Pour the mixture into the prepared baking dish, spreading it out into an even layer.

Step 10

Sprinkle the shredded mozzarella cheese evenly over the top. If using, add the panko breadcrumbs for a crispy topping.

Step 11

Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and the bake is set in the center.

Step 12

Remove the dish from the oven and let it cool for 5 minutes before serving. Enjoy warm as a side dish or light main dish!
