Ingredients

  • 400 grams Yakisoba noodles (pre-cooked or fresh)
  • 250 grams Chicken thigh (or pork, thinly sliced)
  • 150 grams Cabbage, shredded
  • 1 medium Carrot, julienned
  • 1 medium Green bell pepper, thinly sliced
  • 1 small Yellow onion, thinly sliced
  • 2 tablespoons Neutral cooking oil (e.g., vegetable oil)
  • 2 tablespoons Soy sauce
  • 1 tablespoon Oyster sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Ketchup
  • 1 teaspoon Sugar
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Pepper
  • 2 tablespoons Bonito flakes (optional, for garnish)
  • 2 tablespoons Pickled red ginger (beni shoga, for garnish)
  • 1 teaspoon Sesame seeds (optional, for garnish)

Directions

Step 1

Prepare all your ingredients: Julienne the carrot, thinly slice the cabbage, green bell pepper, and onion. Slice the chicken thigh into bite-sized pieces.

Step 2

In a bowl, mix the yakisoba sauce by combining soy sauce, oyster sauce, Worcestershire sauce, ketchup, sugar, and 1 tablespoon of water. Set aside.

Step 3

If using pre-cooked yakisoba noodles, loosen them by running hot water over them and separating the strands with your fingers. Drain well.

Step 4

Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of oil and stir-fry the chicken (or pork) until cooked through and lightly browned. Remove from the skillet and set aside.

Step 5

Add the remaining 1 tablespoon of oil to the skillet. Toss in the onion, carrot, and bell pepper. Stir-fry for 2-3 minutes until slightly softened.

Step 6

Add the cabbage and continue to stir-fry for another 2 minutes, until all the vegetables are tender-crisp.

Step 7

Return the cooked chicken to the skillet and mix with the vegetables.

Step 8

Add the yakisoba noodles to the skillet. Pour the sauce you made earlier over the top. Use tongs to toss everything together until evenly coated and heated through, about 2-3 minutes.

Step 9

Adjust seasoning with salt and pepper to taste.

Step 10

Transfer the yakisoba to serving plates. Garnish with bonito flakes, pickled red ginger, and sesame seeds if desired.

Step 11

Serve immediately and enjoy your homemade mom's yakisoba!
