Season the chicken thighs on both sides with salt and black pepper.
Heat a large skillet over medium-high heat and add olive oil and butter.
Once the butter is melted and bubbling, place the chicken thighs skin-side down in the skillet. Sear for 5-7 minutes until the skin is golden brown and crispy. Flip and cook the other side for another 3-4 minutes. Remove the chicken from the skillet and set aside.
Reduce the heat to medium and add the chopped onion to the skillet. Cook for 3-4 minutes, stirring occasionally, until the onion is softened and translucent.
Add the minced garlic and cook for 1 minute, stirring frequently to avoid burning.
Carefully pour in the white wine, scraping up any browned bits from the bottom of the skillet. Let the wine simmer for 2-3 minutes to reduce slightly.
Add the chicken broth and stir to combine. Nestle the seared chicken thighs back into the skillet, skin-side up.
Add the fresh thyme sprigs to the skillet. Cover and simmer on medium-low heat for 20 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C).
Uncover the skillet and stir in the heavy cream. Let the sauce simmer for another 2-3 minutes, allowing it to thicken slightly.
Remove the thyme sprigs and discard. Taste the sauce and adjust seasoning with additional salt or pepper, if needed.
Garnish with freshly chopped parsley and serve hot. This dish pairs well with mashed potatoes, rice, or crusty bread to soak up the delicious sauce.
