Ingredients

  • 2 cups Broccoli florets
  • 2 cups Cauliflower florets
  • 1 cup Carrots, sliced
  • 1 cup Zucchini, sliced

  • 0.5 teaspoon Black pepper
  • 1 teaspoon Italian seasoning
  • 1.5 cups Shredded cheddar cheese
  • 0.5 cups Grated Parmesan cheese
  • 1 cup Heavy cream
  • 0.5 cups Panko breadcrumbs
  • 2 tablespoons Butter, melted

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Step 2

In a large pot of boiling salted water, blanch the broccoli, cauliflower, and carrots for 4-5 minutes, until slightly tender. Drain and set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the zucchini and garlic, and sauté for 3-4 minutes until softened.

In a large bowl, combine the blanched vegetables and sautéed zucchini. Season with salt, black pepper, and Italian seasoning. Toss to coat evenly.
