Ingredients

  • 3 cups cooked turkey, shredded
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) canned diced tomatoes with green chilies
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 8 corn tortillas
  • 2 cups shredded Mexican blend cheese
  • 1 tablespoon olive oil
  • 2 tablespoons chopped fresh cilantro (optional, for garnish)
  • 0.5 cup sour cream (optional, for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until softened, about 4-5 minutes.

Step 3

Stir in the minced garlic, chili powder, and cumin, and cook for an additional 1 minute until fragrant.

Step 4

Add the canned diced tomatoes with green chilies (undrained), salsa, and shredded turkey. Stir to combine and let simmer for 3-5 minutes. Remove from heat.

Step 5

Grease a 9x13-inch baking dish with non-stick spray or a little oil.

Step 6

Spread a thin layer of the turkey mixture on the bottom of the baking dish.

Step 7

Place two corn tortillas over the turkey mixture, tearing them if necessary to fit and cover the bottom.

Step 8

Spread a layer of the turkey mixture over the tortillas, followed by a layer of shredded cheese.

Step 9

Repeat the layering process (tortillas, turkey mixture, cheese) until all ingredients are used, finishing with a top layer of cheese.

Step 10

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.

Step 11

Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 12

Remove from the oven and let stand for 5 minutes before serving.

Step 13

Garnish with chopped fresh cilantro, and serve with a dollop of sour cream if desired.
