Ingredients

  • 2 cups Cooked turkey or chicken
  • 4 medium Russet potatoes
  • 3 tablespoons Unsalted butter
  • 1 medium Yellow onion
  • 2 large Garlic cloves
  • 1.5 cups Chicken or turkey stock
  • 0.25 cups Heavy cream
  • 2 tablespoons Fresh parsley
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground black pepper
  • 1 tablespoons Olive oil

Directions

Step 1

Peel the russet potatoes and dice them into small, bite-sized cubes. Rinse under cold water to remove excess starch, then pat dry with a clean towel.

Step 2

Dice the onion finely and mince the garlic cloves. Chop the cooked turkey or chicken into small, bite-sized pieces if not already prepared.

Step 3

In a large skillet or sauté pan, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and cook for 8-10 minutes, stirring occasionally, until they begin to crisp and turn golden brown. Remove from the skillet and set aside.

Step 4

Using the same skillet, melt 3 tablespoons of unsalted butter over medium heat. Add the diced onion and cook for 4-5 minutes until softened and translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.

Step 5

Return the cooked potatoes to the skillet along with the turkey or chicken. Stir to combine.

Step 6

Pour in 1.5 cups of chicken or turkey stock and bring the mixture to a gentle simmer. Allow it to cook for 5 minutes, stirring occasionally, until the liquid reduces slightly.

Step 7

Stir in 1/4 cup of heavy cream and season with 1/2 teaspoon of salt and 1/4 teaspoon of ground black pepper. Let the mixture simmer for another 3-5 minutes until the sauce thickens and coats the hash.

Step 8

Garnish with freshly chopped parsley before serving. Enjoy warm, preferably with a slice of crusty bread or a crisp side salad!
