Ingredients

  • 3 large Sweet potatoes
  • 1 cup Crushed pineapple (drained)
  • 1 tablespoon Brown sugar
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt
  • 12 whole Large marshmallows
  • 1 cup Sweetened shredded coconut
  • 2 tablespoons Butter (melted)

Directions

Step 1

Peel the sweet potatoes and cut them into large chunks.

Step 2

In a large pot, boil the sweet potatoes in salted water until they are very tender (approximately 20 minutes). Drain and allow to cool slightly.

Mash the cooked sweet potatoes in a large mixing bowl until smooth.

Add the crushed pineapple, brown sugar, cinnamon, nutmeg, and salt to the mashed sweet potatoes. Mix well to combine.
