Ingredients

  • 4 cups Jasmine rice (cooked and chilled overnight)
  • 1 cup Chicken breast or shrimp
  • 3 tablespoons Vegetable oil
  • 2 cloves Garlic (minced)
  • 2 large Eggs
  • 1 cup Carrots (diced)
  • 1 cup Frozen peas
  • 3 stalks Green onions (sliced)
  • 2.5 tablespoons Soy sauce
  • 1.5 tablespoons Oyster sauce
  • 1 teaspoon Fish sauce
  • 1 teaspoon Brown sugar
  • 2 for garnish Lime wedges
  • 2 tablespoons Cilantro (chopped)
  • 6 for garnish Cucumber slices

Directions

Step 1

Start by cooking the Jasmine rice a day in advance, so it can fully chill in the fridge. This helps prevent soggy fried rice.

Step 2

If using chicken, dice it into small pieces. If using shrimp, peel and devein them.

Step 3

Heat a large wok or skillet over medium-high heat and add the vegetable oil.

Step 4

Once the oil is hot, add the minced garlic and stir-fry for about 30 seconds until fragrant.

Step 5

Add the chicken or shrimp, and cook until just done (about 3-4 minutes), then push it to one side of the pan.

Step 6

Crack the eggs into the pan and scramble them, cooking until fully set, then mix into the chicken or shrimp.

Step 7

Add the diced carrots and frozen peas, stir-frying for 2-3 minutes until the vegetables are tender but crisp.

Step 8

Add the chilled cooked rice to the pan, breaking up any clumps with a spatula or spoon.

Step 9

Pour in the soy sauce, oyster sauce, fish sauce, and brown sugar, stirring everything together until the rice is evenly coated and heated through.

Step 10

Toss in the sliced green onions and give it one final stir before removing the pan from the heat.

Step 11

Serve the fried rice on a plate, garnished with lime wedges, fresh cilantro, and cucumber slices on the side.
