  • 3 tbsp Cumin seeds
  • 2 tbsp Black peppercorns
  • 10 pieces Green cardamom pods
  • 10 pieces Cloves
  • 2 2-inch pieces Cinnamon sticks
  • 2 pieces Bay leaves
  • 1 tbsp Fennel seeds
  • 1 whole Star anise
  • 0.25 piece Nutmeg
  • 4 pieces Dried Kashmiri red chilies

Directions

Step 1

Gather all the spices listed in the ingredients.

Step 2

Heat a heavy-bottomed pan over medium-low heat.

Step 3

Dry roast coriander seeds for 2-3 minutes until fragrant, stirring often to prevent burning. Remove and set aside.

Step 4

Using the same pan, dry roast cumin seeds for 1-2 minutes until aromatic. Remove and set aside.

Step 5

Next, dry roast black peppercorns, green cardamom pods, cloves, cinnamon sticks, and bay leaves together for 2-3 minutes, stirring continuously. Remove and set aside.

Step 6

Roast fennel seeds for 1 minute until fragrant. Add star anise, broken nutmeg piece, and dried Kashmiri red chilies to the pan, roasting together for another 1-2 minutes. Remove from heat.

Step 7

Allow all the roasted spices to cool completely before proceeding to the next step.

Step 8

Once cooled, transfer the spices to a spice grinder or high-powered blender. Grind into a fine powder.

Sift the powder through a fine mesh sieve to remove any larger unground pieces if desired.
