Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 14.5 ounces canned diced tomatoes (with green chilies, if preferred)
  • 15 ounces canned black beans, drained and rinsed
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned corn, drained
  • 1 packet packet of taco seasoning
  • 1 packet packet of ranch seasoning mix
  • 3 cups beef broth
  • 1 tablespoon olive oil
  • 0.5 teaspoons salt
  • 0.25 teaspoons ground black pepper
  • 0 optional toppings (shredded cheese, sour cream, tortilla chips, sliced jalapeños)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion and ground beef to the pot. Cook, breaking up the beef with a wooden spoon, until the beef is browned and the onions are translucent. This should take about 7-9 minutes. Drain any excess fat if necessary.

Step 3

Stir in the taco seasoning and ranch seasoning mix, ensuring the beef and onions are well coated with the spices.

Step 4

Add the diced tomatoes (including the liquid), black beans, kidney beans, and corn to the pot. Mix well.

Step 5

Pour in the beef broth and stir to combine. Bring the soup to a gentle boil over medium-high heat.

Step 6

Once the soup is boiling, reduce the heat to low and let it simmer uncovered for 20 minutes, stirring occasionally.

Step 7

Taste the soup and adjust seasoning with salt and black pepper, if necessary.

Step 8

Serve hot with your choice of toppings such as shredded cheese, sour cream, tortilla chips, or sliced jalapeños. Enjoy!
