Ingredients

  • 1.5 pounds beef round steak
  • 0.5 cups all-purpose flour
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 3 tablespoons vegetable oil
  • 1 large, chopped onion
  • 2 medium, peeled and sliced carrots
  • 2 sliced celery stalks
  • 2 cloves, minced garlic
  • 14.5 ounces canned diced tomatoes
  • 1 cup beef broth
  • 2 teaspoons Worcestershire sauce
  • 0.5 teaspoons dried thyme
  • 4 medium, peeled and quartered potatoes
  • 1 cup, trimmed green beans

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Cut the beef round steak into 4-6 portions and tenderize it using a meat mallet.

Step 3

In a shallow dish, combine the flour, salt, and black pepper.

Step 4

Dredge each piece of beef in the flour mixture, coating evenly, and shake off any excess flour.

Step 5

Heat the vegetable oil in a large oven-safe skillet or Dutch oven over medium-high heat.

Step 6

Brown the beef on both sides in batches, 2-3 minutes per side, and set aside.

Step 7

Reduce the heat to medium and add the chopped onion, sliced carrots, and celery to the skillet. Cook for 5 minutes until softened.

Step 8

Add the minced garlic and cook for another 30 seconds until fragrant.

Step 9

Stir in the diced tomatoes (with their juice), beef broth, Worcestershire sauce, and dried thyme.

Step 10

Nestle the browned beef pieces back into the skillet, making sure they are partially submerged in the sauce.

Step 11

Arrange the potatoes around the beef and bring the mixture to a gentle simmer.

Step 12

Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven.

Step 13

Bake for 1 1/2 hours, or until the beef is fork-tender and the potatoes are cooked through.

Step 14

During the last 15 minutes of cooking, stir in the green beans and return to the oven.

Step 15

Once done, remove the skillet from the oven, taste the sauce, and adjust seasoning with additional salt and pepper, if needed.

Step 16

Serve the Swiss steak, vegetables, and gravy hot, spooned over mashed potatoes or rice if desired.
