Ingredients

  • 5 large sweet potatoes
  • 6 tablespoons unsalted butter
  • 1 cup brown sugar
  • 1 cup heavy cream
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 1.5 cups chopped pecans
  • 2 cups mini marshmallows
  • 0.25 cup all-purpose flour
  • 2 tablespoons granulated sugar

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish lightly with butter or cooking spray and set aside.

Step 2

Peel and cut the sweet potatoes into large chunks. Place them in a large pot of water and bring to a boil. Cook for 15-20 minutes, or until the sweet potatoes are fork-tender.

Step 3

Drain the sweet potatoes and transfer them to a large mixing bowl. Add 4 tablespoons of butter, brown sugar, heavy cream, vanilla extract, cinnamon, nutmeg, and salt. Mash the mixture until it is smooth and creamy.

Step 4

Spread the mashed sweet potato mixture evenly into the prepared baking dish.

Step 5

In a small bowl, prepare the pecan topping. Mix the chopped pecans, flour, granulated sugar, and remaining 2 tablespoons of butter (melted). Sprinkle the pecan mixture evenly over the mashed sweet potatoes.

Step 6

Bake the casserole in the preheated oven for 20 minutes. Carefully remove it from the oven and add the mini marshmallows on top in an even layer.

Step 7

Return the casserole to the oven and bake for an additional 8-10 minutes, or until the marshmallows are golden and bubbly.

Step 8

Serve warm as a delicious side dish for any holiday feast or family meal. Enjoy!
