Ingredients

  • 6 pieces large eggs
  • 4 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon paprika
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon fresh parsley
  • 2 pieces medium-sized ripe tomatoes
  • 1 teaspoon extra virgin olive oil
  • 1 teaspoon balsamic glaze
  • 6 pieces fresh basil leaves

Directions

Step 1

Place the eggs in a saucepan and cover with water. Bring to a boil over medium-high heat, then reduce the heat to a simmer and cook for 10 minutes.

Step 2

Drain the hot water from the saucepan and immediately transfer the eggs to a bowl filled with ice water. Let them cool for 5 minutes.

Step 3

Peel the eggs and slice them in half lengthwise. Carefully remove the yolks and place them in a mixing bowl.

Mash the yolks with a fork and mix in mayonnaise, Dijon mustard, paprika, salt, black pepper, and finely chopped parsley until smooth. Adjust seasoning to taste.
