Ingredients

  • 4 pieces Bone-in, skin-on chicken thighs
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Paprika
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 4 cloves Garlic cloves, minced
  • 1 cup Chicken broth
  • 4 sprigs Fresh thyme sprigs
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Pat the chicken thighs dry with paper towels. Season both sides with salt, black pepper, and paprika.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Place the chicken thighs skin-side down and sear for 5-7 minutes until the skin is golden and crispy. Flip and sear the other side for another 5 minutes. Remove the chicken and set aside.

Step 3

Reduce the heat to medium and add the butter to the same skillet. Once the butter has melted, add the minced garlic and sauté for 30 seconds until fragrant, being careful not to burn it.

Step 4

Pour in the chicken broth and scrape the bottom of the skillet to deglaze and release the browned bits for extra flavor. Add the thyme sprigs to the sauce.

Step 5

Return the chicken thighs to the skillet, skin-side up. Spoon some of the sauce over the chicken. Cover the skillet with a lid and let the chicken simmer on low heat for 20-25 minutes, or until fully cooked (internal temperature of 165°F/74°C).

Step 6

Remove the lid and let the sauce reduce slightly for an additional 3-5 minutes, if needed. Taste the sauce and adjust seasoning with additional salt or pepper, if desired.

Step 7

Sprinkle with fresh parsley for garnish before serving. Serve hot with your favorite sides, such as mashed potatoes, rice, or steamed vegetables.
