  • 2 pounds beef stew meat
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 0.25 cup all-purpose flour
  • 3 tablespoons olive oil
  • 1 large yellow onion
  • 4 medium carrots
  • 3 medium celery stalks
  • 4 medium potatoes
  • 4 cloves garlic
  • 6 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley

Directions

Step 1

Start by preparing the vegetables. Dice the onion into small pieces, peel and slice the carrots, chop the celery into bite-sized chunks, peel and cube the potatoes, and mince the garlic. Set aside.

Step 2

In a large bowl, toss the beef stew meat with salt, pepper, and flour until evenly coated.

Step 3

Heat 2 tablespoons of olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat.

Working in batches, sear the beef in the pot until browned on all sides, about 3-4 minutes per batch. Add an additional tablespoon of olive oil if needed between batches. Remove the browned beef and set it aside.

In the same pot, add the diced onion, stirring and sautéing for 5-7 minutes until softened and translucent.

Stir in the minced garlic and cook for about 1 minute until fragrant.

Simmer the stew for approximately 1.5 to 2 hours, stirring occasionally, until the beef is tender and the potatoes are fully cooked.

Remove the bay leaf and taste the stew, adjusting salt and pepper as needed.

Stir in the frozen peas and let them heat through for about 5 minutes.
