Ingredients

  • 6 cups yellow squash
  • 1 medium onion, diced
  • 4 tablespoons butter
  • 1 teaspoon salt
  • 0.5 teaspoons ground black pepper
  • 1 cup sour cream
  • 1.5 cups shredded cheddar cheese
  • 2 eggs, beaten
  • 1 cup ritz crackers, crushed
  • 2 tablespoons butter, melted

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Wash and slice the yellow squash into thin rounds, ensuring they are evenly cut for uniform cooking.

Step 3

In a large sauté pan, melt 4 tablespoons of butter over medium heat. Add the diced onion and cook until softened, about 5 minutes.

Step 4

Add the sliced squash to the pan, sprinkle with 1 teaspoon of salt and 1/2 teaspoon of pepper, and cook until the squash is tender, about 8-10 minutes. Stir occasionally to prevent sticking.

Step 5

Once the squash mixture is cooked, remove it from the heat and transfer it to a large mixing bowl. Let it cool slightly before proceeding to avoid cooking the eggs prematurely.

Step 6

Add the sour cream, shredded cheddar cheese, and beaten eggs to the squash mixture. Stir gently until well combined.

Step 7

Grease a 9x13-inch baking dish with butter or nonstick spray. Pour the squash mixture into the dish and spread it out evenly.

Step 8

In a small bowl, mix the crushed Ritz crackers with 2 tablespoons of melted butter. Sprinkle this mixture evenly over the top of the casserole.

Step 9

Place the casserole in the preheated oven and bake for 25-30 minutes, or until the topping is golden brown and the casserole is set in the center.

Step 10

Remove from the oven and let the casserole rest for 5 minutes before serving. Enjoy!
