Ingredients

  • 4 cups fresh spinach, chopped (or frozen spinach, thawed and drained)
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1.5 cups whole milk
  • 0.5 cups grated Parmesan cheese
  • 1 cup grated sharp cheddar cheese
  • 0.25 teaspoons nutmeg, freshly grated
  • 0.5 teaspoons salt
  • 0.25 teaspoons ground black pepper
  • 4 pieces large eggs, separated
  • 0.25 teaspoons cream of tartar
  • 0 n/a cooking spray or butter (for greasing the dish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 2-quart soufflé dish (or similar dish) with cooking spray or butter.

Step 2

If using fresh spinach, steam it until wilted, then squeeze out any excess liquid and set it aside. If using thawed frozen spinach, ensure all excess moisture is removed by pressing it with a clean kitchen towel.

Step 3

In a medium saucepan, melt the butter over medium heat. Add the flour and whisk constantly to make a roux. Cook for 1-2 minutes until the mixture turns slightly golden, but do not let it brown.

Step 4

Slowly pour in the milk, whisking continuously to avoid lumps. Cook the mixture for 3-5 minutes, or until it thickens into a creamy consistency.

Step 5

Remove the saucepan from the heat and stir in the Parmesan cheese, cheddar cheese, nutmeg, salt, and pepper. Mix until the cheese melts and the sauce is smooth.

Step 6

Add the prepared spinach to the cheese sauce and gently stir to combine. Set the mixture aside to cool slightly.

Step 7

In a large mixing bowl, beat the egg yolks until they are pale and frothy. Gradually stir the cooled spinach-cheese mixture into the egg yolks.

Step 8

In a separate clean and dry bowl, beat the egg whites on medium speed. Once foamy, add the cream of tartar and continue beating until stiff peaks form.

Step 9

Using a spatula, gently fold the beaten egg whites into the spinach mixture in three portions. Be careful not to deflate the egg whites, as they create the soufflé's fluffy texture.

Step 10

Pour the soufflé mixture into the prepared dish. Run your thumb along the edge of the mixture to create a small border—this helps the soufflé rise evenly.

Step 11

Place the soufflé dish on a baking sheet and bake for 30-35 minutes, or until the soufflé is puffed and golden brown on top. Avoid opening the oven door while baking, as the sudden change in temperature can cause the soufflé to deflate.

Step 12

Serve immediately, as the soufflé will begin to deflate as it cools. Enjoy your Mom's Spinach Soufflé fresh out of the oven!
