Ingredients

  • 1 piece Pie crust (pre-made or homemade)
  • 4 cups Fresh spinach (roughly chopped)
  • 2 tablespoons Butter
  • 4 large Eggs
  • 1.5 cups Heavy cream
  • 0.5 cups Milk
  • 1.5 cups Shredded cheese (cheddar or Swiss)
  • 1 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 0.25 teaspoon Nutmeg (optional)
  • 1 small Onion (finely diced)

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

If using a pre-made pie crust, gently press it into a 9-inch pie dish. If making homemade pie crust, roll it out and fit it into the pie dish, trimming any excess. Set aside.

Step 3

In a large skillet, melt the butter over medium heat. Add the diced onion and sauté for 3-4 minutes until softened.

Add the chopped spinach to the skillet and cook for 2-3 minutes until wilted. Remove from heat and let cool slightly.
