Ingredients

  • 1 pound Ground beef (85% lean)
  • 0.5 pound Ground pork
  • 2 cups Fresh spinach, chopped
  • 0.75 cup Breadcrumbs
  • 0.5 cup Grated Parmesan cheese
  • 2 large Eggs
  • 3 cloves Garlic, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Dried Italian seasoning
  • 2 tablespoons Olive oil (for cooking)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with oil.

Step 2

In a large mixing bowl, combine the ground beef, ground pork, chopped spinach, breadcrumbs, Parmesan cheese, eggs, minced garlic, salt, pepper, and Italian seasoning.

Step 3

Using clean hands, mix the ingredients until they are well incorporated, but do not overmix as it can make the meatballs tough.

Step 4

Scoop about 2 tablespoons of the mixture and roll it into a ball using your hands. Repeat with the remaining mixture to form evenly-sized meatballs.

Step 5

Heat the olive oil in a large skillet over medium heat. Sear the meatballs on all sides, cooking in batches if necessary, until they are golden brown. This should take about 2-3 minutes per side.

Step 6

Transfer the seared meatballs to the prepared baking sheet and bake in the preheated oven for 12-15 minutes, or until they are cooked through and reach an internal temperature of 165°F (74°C).

Step 7

Remove the meatballs from the oven and let them rest for 5 minutes before serving.

Step 8

Serve the spinach meatballs with marinara sauce over pasta, on a sub roll, or as a standalone dish with a side salad. Enjoy!
