Ingredients

  • 2 cups Basmati rice
  • 4 cups Water
  • 2 tablespoons Vegetable oil or ghee
  • 1 large Onion (thinly sliced)
  • 3 cloves Garlic (minced)
  • 1 teaspoon Ginger (grated)
  • 1 medium Carrot (diced)
  • 1 cup Frozen peas
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 Cinnamon stick
  • 1 Bay leaf
  • 2 tablespoons Fresh cilantro (chopped)
  • 1 tablespoon Lemon juice

Directions

Step 1

Rinse the basmati rice thoroughly in cold water until the water runs clear. Soak the rice in fresh water for 20 minutes, then drain and set aside.

Step 2

Heat the vegetable oil or ghee in a large pan over medium heat. Once hot, add the cumin seeds, cinnamon stick, and bay leaf. Sauté for 30 seconds until fragrant.

Step 3

Add the sliced onion to the pan and cook for 5-7 minutes, stirring often, until it turns golden brown.

Step 4

Stir in the minced garlic and grated ginger. Cook for 1 minute until aromatic.

Step 5

Add the diced carrot and cook for 2-3 minutes. Then, stir in the peas, turmeric powder, salt, and black pepper.

Step 6

Add the drained rice to the pan and gently stir to coat the rice with the oil and spices, allowing it to toast for 1-2 minutes.

Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover the pan with a tight-fitting lid, and let the rice simmer for 15 minutes undisturbed.

Step 8

After 15 minutes, turn off the heat and let the rice sit, covered, for another 5 minutes to steam.

Step 9

Remove the lid and fluff the rice gently with a fork. Discard the bay leaf and cinnamon stick.

Step 10

Stir in the fresh cilantro and drizzle the lemon juice on top. Serve hot and enjoy!
