Ingredients

  • 2 tablespoons olive oil
  • 1 pound Italian sausage (mild or hot, casings removed)
  • 1 medium yellow onion, diced
  • 4 cloves garlic cloves, minced
  • 28 ounces canned crushed tomatoes
  • 15 ounces canned tomato sauce
  • 6 ounces canned tomato paste
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon sugar
  • 0.5 teaspoons red pepper flakes (optional)
  • 1 teaspoon salt
  • 0.5 teaspoons ground black pepper
  • 2 tablespoons fresh parsley, chopped
  • 5 leaves basil leaves, fresh (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large heavy-bottomed pot or Dutch oven over medium heat.

Step 2

Add the Italian sausage and cook, breaking it up with a wooden spoon, until browned and cooked through, about 5-7 minutes. Remove the sausage with a slotted spoon and set aside.

Step 3

In the same pot, add the diced onion and cook until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

Step 4

Add the crushed tomatoes, tomato sauce, and tomato paste to the pot, stirring to combine.

Step 5

Return the cooked sausage to the pot and stir it into the sauce.

Step 6

Season the sauce with dried basil, dried oregano, sugar, red pepper flakes (if using), salt, and ground black pepper. Stir the mixture well to incorporate all the flavors.

Step 7

Lower the heat to a gentle simmer and let the sauce cook uncovered for 60-90 minutes, stirring occasionally to prevent sticking.

Step 8

Taste the sauce and adjust the seasoning if necessary.

Step 9

Stir in the fresh parsley just before serving.

Step 10

Serve the sauce over your favorite pasta and garnish with fresh basil leaves if desired. Enjoy!
