Ingredients

  • 6 pieces chicken thighs (bone-in, skin-on)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 0.5 cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 2 cups low-sodium chicken broth
  • 0.5 cup heavy cream
  • 2 cups white rice
  • 4 cups water
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Season the chicken thighs on both sides with salt, black pepper, garlic powder, onion powder, and paprika.

Step 2

Dredge the chicken thighs lightly in all-purpose flour, shaking off any excess flour.

Step 3

Heat olive oil and butter in a large skillet over medium-high heat. Once hot, add the chicken thighs, skin side down, and sear for 4–5 minutes per side until golden brown. Remove from skillet and set aside.

Step 4

In the same skillet, add the chopped onion and sauté for 3–4 minutes until softened. Add the minced garlic and cook for an additional 1 minute.

Step 5

Pour in the chicken broth, scraping the bottom of the skillet to deglaze and incorporate all the browned bits for maximum flavor.

Step 6

Stir in the heavy cream and bring the mixture to a gentle simmer. Return the seared chicken thighs to the skillet, cover, and cook over low heat for 25 minutes or until the chicken is fully cooked and tender.

Step 7

While the chicken is cooking, prepare the rice by bringing 4 cups of water to a boil in a medium saucepan. Add the white rice, reduce heat to low, cover, and simmer for 18–20 minutes until the rice is tender and the water is absorbed. Fluff with a fork before serving.

Step 8

Plate the cooked rice on individual plates or a serving platter, then spoon the smothered chicken and gravy over the top.

Step 9

Garnish with freshly chopped parsley, if desired. Serve immediately and enjoy this delicious family favorite!
