Ingredients

  • 1 medium head Green cabbage
  • 2 large Carrots
  • 0.75 cup Mayonnaise
  • 2 tablespoons Apple cider vinegar
  • 1.5 tablespoons Granulated sugar
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Celery seed
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Remove any damaged outer leaves from the cabbage. Using a sharp knife or a mandoline, thinly slice the cabbage into fine shreds. Place the shredded cabbage into a large mixing bowl.

Step 2

Peel the carrots and grate them using the large holes of a box grater. Add the grated carrots to the bowl with the cabbage.

Step 3

In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, Dijon mustard, celery seed, salt, and black pepper until the dressing is smooth and well combined.

Step 4

Pour the dressing over the cabbage and carrots. Toss everything together thoroughly until the vegetables are evenly coated with the dressing.

Step 5

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld. For the best results, refrigerate for 2-3 hours.

Step 6

Before serving, gently toss the coleslaw again to redistribute any dressing that may have settled at the bottom of the bowl.

Step 7

Serve chilled as a side dish and enjoy!
