  • 8 cups Chicken broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped (optional)

Directions

Step 1

Rinse the dried navy beans under cool water and remove any debris. Place them in a large bowl, cover them with water, and let them soak overnight (6-8 hours). Drain and rinse before cooking.

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and cook for 5-7 minutes until softened.
