Ingredients

  • 3 cups Old-fashioned rolled oats
  • 1 cup Raw nuts (such as almonds, pecans, or walnuts), roughly chopped
  • 1 cup Unsweetened shredded coconut
  • 0.33 cup Honey or maple syrup
  • 0.25 cup Coconut oil or vegetable oil, melted
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 1 cup Dried fruit (such as raisins, cranberries, or chopped apricots)

Directions

Step 1

Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, combine the rolled oats, chopped nuts, and shredded coconut. Stir until evenly mixed.

Step 3

In a small saucepan or microwave-safe bowl, combine the honey or maple syrup, melted coconut oil, vanilla extract, ground cinnamon, and salt. Heat briefly, stirring until smooth and well combined.

Step 4

Pour the wet mixture over the dry ingredients in the bowl. Stir thoroughly to ensure all dry ingredients are evenly coated.

Step 5

Spread the granola mixture evenly onto the prepared baking sheet in a thin layer.

Step 6

Bake in the preheated oven for 20-25 minutes, stirring halfway through to ensure even toasting. Keep an eye on it to avoid burning.

Step 7

Once the granola is golden brown and fragrant, remove it from the oven and allow it to cool completely on the baking sheet. It will crisp up as it cools.

Step 8

After cooling, mix in the dried fruit. Transfer the granola to an airtight container for storage.

Step 9

Serve with milk, yogurt, or as a convenient grab-and-go snack!
