  • 3 pounds beef roast (chuck or sirloin)
  • 2 teaspoons kosher salt

  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 2 tablespoons olive oil
  • 2 cups beef broth
  • 3 medium carrots, peeled and cut into large chunks
  • 2 medium yellow onions, quartered
  • 4 medium potatoes, scrubbed and quartered
  • 3 sprigs fresh rosemary sprigs
  • 4 cloves fresh garlic cloves, minced

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Pat the beef roast dry with paper towels and season it generously on all sides with kosher salt, black pepper, garlic powder, onion powder, and dried thyme.

Heat the olive oil in a large, oven-safe skillet or Dutch oven over medium-high heat.

Sear the beef roast on all sides until browned, approximately 3-4 minutes per side. Remove the roast from the skillet and set it aside.
