Ingredients

  • 1 pound medium shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 2 stalks celery stalks, diced
  • 3 cloves garlic cloves, minced
  • 14.5 ounces canned diced tomatoes (with juice)
  • 2 tablespoons tomato paste
  • 1 cup chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 0.5 teaspoon dried thyme
  • 1 leaf bay leaf
  • 1 teaspoon Worcestershire sauce
  • 0 hot sauce (optional, to taste)
  • 4 cups cooked white rice (for serving)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat olive oil in a large skillet or Dutch oven over medium heat.

Step 2

Add the diced onion, green bell pepper, and celery. Sauté for 5-7 minutes, until the vegetables are softened.

Step 3

Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

Step 4

Add the canned diced tomatoes (with their juice), tomato paste, chicken broth, Cajun seasoning, paprika, thyme, bay leaf, Worcestershire sauce, and hot sauce (if using). Stir to combine.

Step 5

Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for 15 minutes, stirring occasionally.

Step 6

Uncover, add the shrimp to the skillet, and stir gently to coat them in the sauce. Cook for 5-7 minutes, or until the shrimp are opaque and cooked through.

Step 7

Remove and discard the bay leaf.

Step 8

Serve the Shrimp Creole over a bed of cooked white rice.

Step 9

Garnish with freshly chopped parsley and additional hot sauce, if desired.
