Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined.
Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.
In a small bowl, whisk together the milk and beaten egg. Pour this mixture into the flour and butter mixture, and gently stir until the dough just comes together. Do not overmix.
Turn the dough out onto a lightly floured surface. Pat it into a 1-inch thick rectangle, being careful not to handle it too much to keep the butter cold.
Using a 2.5-inch biscuit cutter, cut out shortcakes and transfer them to the prepared baking sheet. Gather and re-roll scraps to cut out more if needed.

While the shortcakes are baking, prepare the strawberries. Toss the sliced strawberries with 3 tablespoons of granulated sugar in a bowl. Let them macerate for at least 10 minutes until they release their juices.
