Ingredients

  • 2 cups All-purpose flour
  • 3 tablespoons Granulated sugar
  • 1 tablespoon Baking powder
  • 0.5 teaspoons Salt
  • 0.5 cups Unsalted butter, cold and cubed
  • 0.75 cups Whole milk
  • 1 Egg, lightly beaten
  • 2 tablespoons Heavy cream (for brushing)
  • 1 tablespoon Granulated sugar (for topping)
  • 3 cups Fresh strawberries, sliced
  • 3 tablespoons Granulated sugar (for strawberries)
  • 2 cups Whipped cream

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined.

Step 3

Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.

Step 4

In a small bowl, whisk together the milk and beaten egg. Pour this mixture into the flour and butter mixture, and gently stir until the dough just comes together. Do not overmix.

Step 5

Turn the dough out onto a lightly floured surface. Pat it into a 1-inch thick rectangle, being careful not to handle it too much to keep the butter cold.

Using a 2.5-inch biscuit cutter, cut out shortcakes and transfer them to the prepared baking sheet. Gather and re-roll scraps to cut out more if needed.

Brush the tops of the shortcakes with heavy cream and sprinkle with sugar. This will give them a golden, lightly sweet crust.

To assemble, slice each shortcake in half horizontally. Spoon a generous amount of the macerated strawberries onto the bottom half, followed by a dollop of whipped cream. Place the top half of the shortcake back on, and if desired, top with more strawberries and cream.
