Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cups brown sugar
  • 0.25 cups unsalted butter, cold and cubed
  • 0.75 cups molasses
  • 0.75 cups hot water
  • 0.75 teaspoons baking soda
  • 1 large egg, beaten
  • 1 9-inch pie crust, unbaked

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a medium-sized mixing bowl, combine the all-purpose flour and brown sugar.

Step 3

Using your fingers or a pastry cutter, cut the cold cubed butter into the flour and sugar mixture until it resembles coarse crumbs. Set aside 1/2 cup of this crumb mixture for topping.

Step 4

In a separate bowl, whisk together the molasses, hot water, and baking soda until well combined.

Step 5

Gently stir the beaten egg into the molasses mixture.

Step 6

Pour the molasses mixture into the remaining crumb mixture and mix until smooth.

Step 7

Fit the unbaked 9-inch pie crust into a pie dish and crimp the edges.

Step 8

Pour the molasses filling into the pie crust and sprinkle the reserved 1/2 cup of crumb mixture evenly on top.

Step 9

Bake the pie in the preheated oven for 35 to 40 minutes, or until the filling is set and the top is golden brown.

Step 10

Remove the pie from the oven and let it cool completely before slicing and serving.
