Ingredients

  • 2 tablespoons olive oil
  • 1 pound Italian sausage (mild or spicy, casings removed)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and cubed
  • 6 cups chicken broth
  • 2 15-ounce cans canned white beans (great northern or cannellini), drained and rinsed
  • 2 cups kale, stems removed and chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the sausage to the pot and cook, breaking it up with a wooden spoon, until browned and fully cooked, about 5-7 minutes. Remove the sausage from the pot and set aside, leaving the rendered fat in the pot.

Step 3

Add the diced onion to the pot and sauté for 3-4 minutes until softened.

Step 4

Stir in the minced garlic and cook for an additional minute until fragrant.

Step 5

Add the cubed sweet potatoes to the pot and stir to coat in the onion and garlic mixture.

Step 6

Pour in the chicken broth, and bring the mixture to a gentle boil over high heat.

Step 7

Reduce the heat to medium-low and simmer for 10-12 minutes, or until the sweet potatoes are tender when pierced with a fork.

Step 8

Add the cooked sausage back to the pot, along with the white beans, chopped kale, thyme, smoked paprika, salt, black pepper, and red pepper flakes (if using).

Step 9

Simmer for an additional 5-7 minutes until the kale is wilted and the flavors are well combined.

Step 10

Taste and adjust seasoning, if needed.

Step 11

Serve warm with crusty bread or your favorite soup toppers. Enjoy!
