  • 6 medium Roma tomatoes
  • 2 medium Jalapeño peppers
  • 1 small Red onion
  • 2 large Garlic cloves
  • 1 cup Cilantro leaves
  • 1 medium Lime
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Ground cumin
  • 0.25 teaspoon Smoked paprika (optional)

Directions

Step 1

Rinse the Roma tomatoes and jalapeño peppers under cold water, then pat them dry.

Step 2

Chop the Roma tomatoes into quarters and remove the cores. Place them in a food processor or blender.

Step 3

Remove the stems from the jalapeños. If you prefer less spice, slice them open and remove the seeds and membranes. Add them to the food processor.

Step 4

Peel and roughly chop the red onion and garlic cloves. Add these to the food processor with the tomatoes and jalapeños.

Step 5

Rinse the cilantro thoroughly, then remove any large stems. Add the cilantro leaves to the food processor.

Cut the lime in half and juice it directly into the food processor, making sure to catch any seeds.

Add the salt, black pepper, ground cumin, and smoked paprika (if using) to the food processor.

Pulse the mixture several times until the salsa reaches your desired consistency. For a chunky salsa, pulse fewer times; for a smoother salsa, process for a bit longer.
