Ingredients

  • 6 pieces (thinly sliced) beef round steak
  • 6 tablespoons yellow mustard
  • 6 slices bacon
  • 1 large (thinly sliced) onion
  • 3 spears (halved lengthwise) dill pickles
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 2 tablespoons vegetable oil
  • 2 cups beef broth
  • 2 medium (cut into chunks) carrots
  • 2 stalks (cut into chunks) celery
  • 1 piece bay leaf
  • 1 cup (optional, for garnish) sour cream

Directions

Step 1

Lay each slice of beef flat on a clean work surface. Spread 1 tablespoon of mustard over the surface of each slice.

Step 2

Lay one slice of bacon lengthwise on each piece of beef. Add a few onion slices and a halved pickle spear to each slice, placing them toward one end.

Step 3

Season the beef with salt and black pepper. Roll up each piece tightly, starting at the filled end, and secure with kitchen twine or toothpicks.

Step 4

Lightly dust the beef rolls with all-purpose flour, shaking off any excess.

Step 5

Heat the vegetable oil in a large skillet or Dutch oven over medium-high heat. Brown the rouladen on all sides, working in batches if necessary. Remove the rouladen and set aside.

Step 6

Add the remaining onion slices to the skillet and sauté until softened, about 3 to 4 minutes.

Step 7

Deglaze the pan by adding the beef broth, scraping up any browned bits from the bottom of the pan. Bring the liquid to a simmer.

Step 8

Return the rouladen to the skillet, along with the carrots, celery, and bay leaf. Cover and reduce the heat to low. Simmer gently for 1.5 to 2 hours, or until the beef is tender.

Step 9

Remove the rouladen, carrots, and celery from the skillet and keep them warm. Discard the bay leaf.

Step 10

Optionally, thicken the sauce by simmering it for a few additional minutes, or stir in sour cream for a creamy finish.

Step 11

Serve the rouladen with the vegetables, drizzled with the sauce. Pair with mashed potatoes, spaetzle, or egg noodles for a hearty meal.
