Preheat your oven to 325°F (165°C).
Pat the beef chuck roast dry with paper towels to help it brown evenly.
Rub the roast evenly with olive oil, then season all sides with salt, black pepper, garlic powder, onion powder, and dried thyme.
In a large, oven-safe pot or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Sear the roast on all sides until it’s browned, about 3-4 minutes per side. Remove the roast and set it aside.
Peel and chop the carrots and potatoes into large chunks. Cut the yellow onion into wedges and smash the garlic cloves lightly to release their flavors.
In the same pot, add the onion wedges and garlic cloves. Sauté for 2-3 minutes until fragrant.
Deglaze the pot by pouring in the beef broth, scraping up the browned bits from the bottom with a wooden spoon.
Return the roast to the pot, placing it on top of the vegetables. Arrange the carrots and potatoes around the roast.
Cover the pot with a lid and place it in the preheated oven. Roast for approximately 3 hours, or until the beef is tender and falls apart easily with a fork.
Once cooked, remove the pot from the oven and allow the roast to rest for 15 minutes before serving.
Serve the roast beef with the tender vegetables and some of the savory broth. Enjoy!
