Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 3 cups whole milk
  • 0.5 cup granulated sugar
  • 0.25 teaspoons salt
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 0.5 teaspoons ground cinnamon (optional, for garnish)
  • 0.5 cup raisins (optional)

Directions

Step 1

In a medium saucepan, bring the water to a boil over medium-high heat.

Step 2

Stir in the rice and reduce the heat to low. Cover and simmer for about 15 minutes, or until the rice has absorbed almost all the water and is tender.

Step 3

Once the rice is cooked, add the whole milk, granulated sugar, and salt to the saucepan. Stir well to combine.

Step 4

Increase the heat to medium and cook, stirring frequently to prevent the rice from sticking, for about 20 minutes or until the mixture thickens and becomes creamy.

Step 5

Remove the saucepan from the heat and stir in the unsalted butter and vanilla extract until fully incorporated.

Step 6

If using raisins, gently fold them into the pudding while it is still warm.

Step 7

Serve the rice pudding warm or allow it to cool slightly. Optionally, sprinkle with a dusting of ground cinnamon for garnish before serving.

Step 8

The pudding can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of milk to restore creaminess if necessary.
