Ingredients

  • 1 cup uncooked long-grain white rice
  • 2 cups water
  • 1 pound ground beef (or ground turkey)
  • 1 medium yellow onion, diced
  • 1 10.5-ounce can of cream of mushroom soup
  • 1 14.5-ounce can of diced tomatoes, drained
  • 1.5 cups frozen mixed vegetables (peas, carrots, green beans, corn)
  • 2 cups shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon olive oil (for sautéing)
  • 1 tablespoon parsley or fresh herbs (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish lightly with cooking spray or butter.

Step 2

Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rice and water, and bring to a boil. Reduce the heat to low, cover, and cook for 15 minutes or until tender. Remove from heat and set aside.

Step 3

In a large skillet over medium heat, heat the olive oil. Add the diced onion and sauté for 3-4 minutes until softened and translucent.

Step 4

Add the ground beef to the skillet and cook, breaking it apart with a wooden spoon, until browned and fully cooked, about 7-8 minutes. Drain any excess grease.

Step 5

Stir the garlic powder, salt, and black pepper into the beef mixture. Mix well to combine.

Step 6

In a large mixing bowl, combine the cooked rice, ground beef mixture, cream of mushroom soup, diced tomatoes, frozen mixed vegetables, and 1 cup of shredded cheddar cheese. Stir until everything is evenly coated.

Step 7

Transfer the mixture to the prepared baking dish, spreading it out evenly. Sprinkle the remaining 1 cup of cheddar cheese on top.

Step 8

Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.

Step 9

Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the casserole is heated through.

Step 10

Let the casserole cool slightly before serving. Garnish with parsley or fresh herbs if desired.
