Ingredients

  • 2.5 cups All-purpose flour
  • 2 cups Bran cereal (such as All-Bran)
  • 2 cups Buttermilk
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar, packed
  • 0.5 cup Vegetable oil
  • 2 large Eggs
  • 0.25 cup Molasses
  • 2.5 teaspoons Baking soda
  • 0.5 teaspoon Salt
  • 1 cup Raisins (optional)

Directions

Step 1

In a large mixing bowl, combine the bran cereal and buttermilk. Let sit for 10 minutes to allow the cereal to soften.

Step 2

Meanwhile, in a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

Step 3

In the bowl with the bran mixture, add the granulated sugar, brown sugar, vegetable oil, eggs, and molasses. Mix well until thoroughly combined.

Step 4

Gradually add the dry ingredients to the wet ingredients, stirring gently until just incorporated. Be careful not to overmix.

Step 5

If using, fold in the raisins.

Step 6

Cover the batter and refrigerate for at least 1 hour. The batter can be stored in the refrigerator for up to 7 days.

Step 7

When ready to bake, preheat the oven to 375°F (190°C) and line a muffin tin with paper liners or grease lightly.

Step 8

Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.

Step 9

Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 10

Remove from the oven and let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely. Serve warm or room temperature.
