Ingredients

  • 2.5 cups All-purpose flour
  • 0.75 cup Unsweetened cocoa powder
  • 2 teaspoons Baking soda
  • 0.5 teaspoon Salt
  • 0.5 cup Butter, softened
  • 2 cups Granulated sugar
  • 3 pieces Large eggs
  • 2 teaspoons Vanilla extract
  • 1.5 cups Buttermilk
  • 1 cup Hot coffee
  • 1 tablespoon Unsalted butter, for greasing pans
  • 2 tablespoons Confectioners' sugar (optional, for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans with butter and dust lightly with flour. Tap out any excess flour and set the pans aside.

Step 2

In a medium mixing bowl, sift together the flour, cocoa powder, baking soda, and salt. Whisk to combine and aerate. Set aside.

Step 3

In a large mixing bowl, cream together the softened butter and granulated sugar using a hand or stand mixer on medium speed until the mixture is light and fluffy, about 2-3 minutes.

Step 4

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Step 5

Reduce the mixer speed to low and gradually add the dry flour mixture in three additions, alternating with the buttermilk. Start and end with the flour mixture, mixing until just combined. Do not overmix.

Step 6

Slowly pour in the hot coffee and stir until the batter is smooth. The batter will be thin; this is normal.

Step 7

Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.

Step 8

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Step 9

Remove the pans from the oven and let the cakes cool in the pans for 10 minutes. Then, run a knife around the edges and carefully invert the cakes onto a wire rack to cool completely.

Step 10

Dust the cooled cakes with confectioners' sugar if desired, or frost with your favorite chocolate or cream cheese frosting.

Step 11

Slice and serve! Store leftovers in an airtight container at room temperature for up to 3 days.
