Ingredients

  • 1 store-bought or homemade pie crust
  • 4 large eggs
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1 cup shredded cheese (e.g., Gruyère, cheddar, or Swiss)
  • 6 slices cooked and crumbled bacon
  • 0.5 cup chopped onion (optional)
  • 1 cup chopped fresh spinach (optional)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.125 teaspoon ground nutmeg (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Place the pie crust into a 9-inch pie dish and crimp the edges if desired. Prick the bottom of the pie crust with a fork to prevent bubbling.

Step 2

Blind bake the pie crust. Cover it with parchment paper or aluminum foil, and fill it with pie weights or dried beans. Bake for 10 minutes, then remove the weights and parchment/foil and bake for another 5 minutes until lightly golden. Set aside to cool slightly.

Step 3

In a large mixing bowl, whisk together the eggs, milk, and heavy cream until well combined. Stir in the salt, black pepper, and nutmeg (if using).

Step 4

Sprinkle the shredded cheese evenly over the bottom of the pre-baked pie crust. Layer the cooked bacon, chopped onion, and spinach (if using) over the cheese.

Step 5

Pour the egg mixture over the fillings in the pie crust, ensuring it spreads evenly. Be careful not to overfill.

Step 6

Place the filled pie dish onto a baking sheet to catch any potential spills and carefully transfer to the oven.

Step 7

Bake the quiche at 375°F (190°C) for 35-40 minutes, or until the custard is set and the top is lightly golden. A knife inserted into the center should come out clean.

Step 8

Remove the quiche from the oven and allow it to cool for 5-10 minutes before slicing. Serve warm, at room temperature, or chilled.
