Ingredients

  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup brown sugar
  • 0.25 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 0.5 teaspoon salt
  • 1 cup canned pumpkin puree
  • 0.5 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 0.75 cup semi-sweet chocolate chips
  • 0.5 cup chopped walnuts or pecans (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease or line a 9x9-inch baking pan with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, cocoa powder, baking soda, cinnamon, pumpkin pie spice, and salt until well combined.

Step 3

In a separate medium mixing bowl, whisk together the pumpkin puree, vegetable oil, vanilla extract, and eggs until smooth and well blended.

Step 4

Pour the wet ingredients into the dry ingredients and gently fold together using a spatula or wooden spoon until just combined. Be careful not to overmix.

Step 5

Fold in the chocolate chips and chopped nuts (if using) until evenly distributed throughout the batter.

Step 6

Pour the batter into the prepared baking pan and spread it evenly with a spatula.

Step 7

Bake in the preheated oven for 28-32 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs but no wet batter.

Step 8

Remove from the oven and let cool in the pan for 15 minutes. Then transfer to a wire rack to cool completely before slicing into bars.

Step 9

Serve as is or dust lightly with powdered sugar for a decorative touch. Store leftovers in an airtight container at room temperature for up to 3 days.
