Ingredients

  • 3 cups All-purpose flour
  • 2.5 cups Granulated sugar
  • 2 teaspoons Baking soda
  • 0.75 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 1 can (15 ounces) Canned pumpkin puree
  • 1 cup Vegetable oil
  • 4 large Eggs
  • 0.5 cup Water
  • 2 teaspoons Pure vanilla extract
  • 1 cup Chopped walnuts or pecans (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease and flour two 9x5-inch loaf pans or line them with parchment paper.

Step 2

In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking soda, salt, cinnamon, and nutmeg. Whisk together until evenly combined.

Step 3

In a separate bowl, whisk together the pumpkin puree, vegetable oil, eggs, water, and vanilla extract until smooth.

Step 4

Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix, as this can make the bread dense.

Step 5

If desired, fold in the chopped walnuts or pecans gently.

Step 6

Divide the batter evenly between the two prepared loaf pans.

Step 7

Bake in the preheated oven for 55 to 65 minutes or until a toothpick inserted in the center of the loaves comes out clean.

Step 8

Remove the pans from the oven and let them cool on a wire rack for 10 minutes.

Step 9

Carefully run a knife around the edges of the pans and remove the bread. Allow the loaves to cool completely on the wire rack before slicing and serving.

Step 10

Store any leftovers in an airtight container at room temperature for up to 3 days, or wrap tightly and freeze for up to 3 months.
