Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Baking soda
  • 2 teaspoons Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 1.5 cups Granulated sugar
  • 1 cup Vegetable oil
  • 4 Eggs
  • 1 can (15 oz) Canned pumpkin puree
  • 8 ounces Cream cheese
  • 0.5 cup Unsalted butter, softened
  • 3 cups Powdered sugar
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan or line it with parchment paper for easy removal.

Step 2

In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.

Step 3

In a large mixing bowl, combine the granulated sugar, vegetable oil, and eggs. Whisk until smooth and well blended.

Step 4

Add the canned pumpkin puree to the wet mixture and mix until fully incorporated.

Step 5

Gradually stir the dry ingredients into the wet ingredients, mixing just until combined. Be careful not to overmix.

Step 6

Pour the batter into the prepared baking pan, spreading it evenly with a spatula.

Step 7

Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Step 8

Remove the pan from the oven and allow the bars to cool completely in the pan on a wire rack.

Step 9

While the bars are cooling, prepare the cream cheese frosting. In a mixing bowl, beat together the cream cheese and softened butter until light and fluffy.

Step 10

Gradually add the powdered sugar to the cream cheese mixture, beating well after each addition. Add the vanilla extract and mix until smooth and creamy.

Step 11

Spread the frosting evenly over the cooled pumpkin bars. For clean cuts, chill the frosted bars in the refrigerator for about 20 minutes before slicing.

Step 12

Cut the chilled bars into 24 squares and serve. Store any leftovers in an airtight container in the refrigerator.
