Ingredients

  • 1.5 pounds Pork shoulder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 medium Onion
  • 3 Garlic cloves
  • 3 cups Canned pork and beans
  • 1 cup Tomato sauce
  • 0.25 cup Brown sugar
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Mustard
  • 1 teaspoon Smoked paprika
  • 2 tablespoons Oil (vegetable or olive)
  • 1 cup Water

Directions

Step 1

Trim the pork shoulder of excess fat and cut it into 1-inch cubes. Season the pork pieces with salt and black pepper.

Step 2

Finely chop the onion and mince the garlic cloves. Set aside.

Step 3

Heat the oil in a large heavy-bottom pot or Dutch oven over medium heat. Sear the pork pieces in batches until they are golden brown on all sides, about 5-7 minutes per batch. Remove and set aside.

Step 4

In the same pot, lower the heat and sauté the onion until it is soft and translucent, about 5 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant.

Step 5

Deglaze the pot by adding the water, scraping up the browned bits from the bottom. This will add loads of flavor to the dish.

Step 6

Return the seared pork to the pot. Stir in the canned pork and beans, tomato sauce, brown sugar, apple cider vinegar, mustard, and smoked paprika. Mix well to combine.

Step 7

Bring the mixture to a gentle simmer. Cover and cook on low heat for 60-75 minutes, stirring occasionally, or until the pork is tender and the flavors have melded together.

Step 8

Taste and adjust seasoning if needed. If the dish is too thick, add a splash of water to reach your desired consistency.

Step 9

Serve warm with crusty bread, steamed rice, or as a satisfying standalone dish.
