Preheat your oven to 375°F (190°C).
Season the pork chops with salt, pepper, garlic powder, and paprika on both sides.
Heat a large skillet over medium heat and melt the butter. Sear the pork chops for 2-3 minutes on each side until browned. Remove from the skillet and set aside.
Peel and thinly slice the potatoes into rounds about 1/8 inch thick. Peel and thinly slice the onion.
In a medium bowl, mix the cream of mushroom soup and milk until well combined.
Grease a 9x13-inch baking dish with butter or non-stick spray. Layer half of the sliced potatoes on the bottom of the dish, followed by half of the sliced onions. Sprinkle lightly with salt and pepper.
Pour half of the soup mixture over the potato layer, spreading it evenly.
Repeat with the remaining potatoes, onions, and soup mixture.
Nestle the seared pork chops on top of the potatoes and onions, pressing them lightly into the casserole.
