Preheat your oven to 350°F (175°C).
Season the diced pork shoulder with salt and black pepper. Sprinkle the flour over the pork, tossing to coat.
In a large oven-safe skillet or Dutch oven, heat the olive oil over medium-high heat. Brown the pork on all sides (about 5-7 minutes). Remove the pork from the skillet and set aside.
In the same skillet, add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute, stirring frequently.
Add the sliced carrots, celery, and diced potatoes to the skillet. Cook for 5 minutes, stirring occasionally.
Return the browned pork to the skillet. Pour in the chicken broth and stir in the heavy cream, dried thyme, and paprika. Bring the mixture to a simmer.

Remove the skillet from the oven and stir in the frozen peas. Sprinkle the shredded cheddar cheese over the top.
Place the skillet back in the oven (uncovered) and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
