  • 1.5 pounds Pork shoulder, diced
  • 1 teaspoon Salt

  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 2 large Carrots, peeled and sliced
  • 2 stalks Celery stalks, sliced
  • 3 medium Potatoes, diced
  • 2 cups Chicken broth
  • 0.5 cup Heavy cream
  • 1 teaspoon Dried thyme
  • 1 teaspoon Paprika
  • 0.75 cup Frozen peas
  • 1 cup Shredded cheddar cheese

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Season the diced pork shoulder with salt and black pepper. Sprinkle the flour over the pork, tossing to coat.

Step 3

In a large oven-safe skillet or Dutch oven, heat the olive oil over medium-high heat. Brown the pork on all sides (about 5-7 minutes). Remove the pork from the skillet and set aside.

Step 4

In the same skillet, add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute, stirring frequently.

Add the sliced carrots, celery, and diced potatoes to the skillet. Cook for 5 minutes, stirring occasionally.

Return the browned pork to the skillet. Pour in the chicken broth and stir in the heavy cream, dried thyme, and paprika. Bring the mixture to a simmer.
