Ingredients

  • 1 pound kielbasa sausage
  • 1 medium head green cabbage
  • 4 medium potatoes
  • 2 large carrots
  • 1 large onion
  • 3 garlic cloves
  • 4 cups chicken broth
  • 2 bay leaves
  • 1 teaspoon paprika
  • 1 teaspoon caraway seeds
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 2 tablespoons fresh parsley

Directions

Step 1

Slice the kielbasa sausage into 1/2-inch rounds and set aside.

Step 2

Chop the cabbage into bite-sized pieces and peel and dice the potatoes into 1-inch cubes.

Step 3

Peel and slice the carrots into thin rounds and finely chop the onion and garlic.

Step 4

In a large pot or Dutch oven, heat the vegetable oil over medium heat.

Step 5

Add the kielbasa slices and cook until browned on both sides, about 5 minutes. Remove from the pot and set aside.

Step 6

In the same pot, sauté the onion until translucent, about 3-4 minutes. Add the garlic and cook for 1 more minute.

Step 7

Add the carrots, potatoes, and cabbage to the pot. Stir well to combine.

Step 8

Pour in the chicken broth and add the bay leaves, paprika, caraway seeds, salt, and black pepper. Stir to mix.

Step 9

Bring the stew to a boil, then reduce the heat to low and cover the pot with a lid.

Step 10

Simmer for 40-45 minutes, stirring occasionally, until the vegetables are tender.

Step 11

Return the cooked kielbasa to the pot and cook for an additional 10 minutes to heat through.

Step 12

Taste and adjust seasoning with more salt and pepper if needed.

Step 13

Remove bay leaves before serving and garnish with fresh parsley. Serve warm with crusty bread or rye bread if desired.
