Ingredients

  • 2 lbs Polish sausage (kielbasa)
  • 1 large Yellow onion
  • 3 Garlic cloves
  • 2 cups Sauerkraut
  • 1 cup Chicken broth
  • 2 tbsp Butter
  • 1 tsp Caraway seeds
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Fresh parsley (optional, for garnish)

Directions

Step 1

Slice the Polish sausage into 1-inch pieces. Set aside.

Step 2

Peel and thinly slice the onion. Mince the garlic cloves.

Step 3

Heat a large skillet or Dutch oven over medium heat. Add 1 tablespoon of butter and let it melt.

Step 4

Add the sliced sausage to the skillet and cook for 5-7 minutes, turning occasionally, until browned on all sides. Remove the sausage from the skillet and set aside.

Step 5

In the same skillet, add the remaining 1 tablespoon of butter. Add the sliced onion and cook for 5-6 minutes, stirring occasionally, until softened and lightly caramelized.

Step 6

Add the minced garlic to the skillet and cook for 1 minute, stirring frequently, until fragrant.

Step 7

Stir in the sauerkraut, chicken broth, and caraway seeds. Bring the mixture to a gentle simmer.

Step 8

Return the browned sausage to the skillet. Stir to combine, then season with salt and black pepper.

Step 9

Cover the skillet and let the mixture simmer over low heat for 20 minutes, stirring occasionally, to allow the flavors to meld.

Step 10

Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley if desired.
