Ingredients

  • 1 cup Unsalted butter
  • 2 cups All-purpose flour
  • 0.5 cup Chopped pecans
  • 8 oz Cream cheese, softened
  • 1 cup Powdered sugar
  • 16 oz Frozen whipped topping (e.g., Cool Whip), thawed
  • 2 3.4 oz packages Instant pistachio pudding mix
  • 3 cups Cold milk
  • 0.25 cup Chopped pistachios (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a mixing bowl, combine the flour, butter, and chopped pecans. Use a pastry cutter or your hands to mix until the mixture reaches a crumbly consistency.

Step 3

Press the mixture firmly and evenly into the bottom of a 9x13 inch baking dish to form the crust.

Step 4

Bake the crust in the preheated oven for 20 minutes, or until light golden brown. Remove from the oven and allow it to cool completely.

Step 5

While the crust is cooling, beat the softened cream cheese and powdered sugar together in a medium mixing bowl until smooth and creamy.

Step 6

Gently fold in half of the thawed whipped topping into the cream cheese mixture until well combined. Spread this layer evenly over the cooled crust.

Step 7

In another bowl, whisk together the pistachio pudding mix and cold milk for about 2 minutes, or until thickened.

Step 8

Spread the pistachio pudding evenly over the cream cheese layer.

Step 9

Spread the remaining whipped topping over the pistachio pudding layer as the final layer.

Step 10

Sprinkle chopped pistachios on top for garnish, if desired.

Step 11

Cover the dish and refrigerate for at least 2 hours (or overnight) to set.

Step 12

Slice into squares and serve chilled. Enjoy!
