Ingredients

  • 2.5 cups All-purpose flour
  • 1.75 cups Granulated sugar

  • 0.75 cups Unsalted butter, softened
  • 4 large Eggs
  • 1 can (20 ounces) Crushed pineapple (with juice)
  • 0.25 cups Dark rum
  • 2 teaspoons Vanilla extract
  • 1 cups Heavy whipping cream
  • 2 tablespoons Powdered sugar
  • 0.5 cups Sweetened coconut flakes, toasted
  • 0 Optional garnish: maraschino cherries

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and lightly flour a 9x13-inch baking pan and set aside.

In a medium bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

In a large mixing bowl, cream the softened butter with an electric mixer until light and fluffy. Add the eggs one at a time, beating well after each addition.
